Middle Eastern music is complex and strange to the newcomer/ westerner. For an excellent breakdown of the basics visit Shira's site:
Complete with audio clips, Shira explains the forms of Folk, Classical, Modern and Pop and then further with variations in Turkish, Persian and Arabic music.
And importantly, what is everyone singing about? We hear the emotions in the voice and dramatic changes in the rhythm, but without knowledge of the language the expression in performance can be lost. Potentially even worse, the performance can become culturally offensive or just embarrassing for both the audience and the dancer.
Again Shira provides a few translations and a passionate plea to the community to learn:
Inevitably what music you choose to dance to is what moves you.
